       <p>Ingredienti per circa 30 biscotti
Biscotti teschio
(30 biscotti)
 
380 g di burro a temperatura ambiente
500 g di farina 00
240 g di farina di nocciole tostate
240 g di zucchero semolato
1 uovo medio (circa 50 g)
1 pizzico di sale
1 bacca di vaniglia

Per decorare
30 g di pinoli

Cominciamo la nostra ricetta prendendo una ciotola capiente e setacciando all&#039;interno la farina; ora aggiungiamo la farina di nocciole tostate, che vi ricordo in alternativa potete sostituire anche con quella di mandorle... uniamo lo zucchero... e mescoliamo. Ora aggiungiamo il burro, che deve essere a temperatura ambiente, quindi morbido... e cominciamo a impastare con la punta delle dita... cerchiamo di romperlo, sbriciolarlo, amalgamandolo alle farine.
Eccoci, come vedete la consistenza è fatta di briciole, adesso noi rovesceremo il tutto su una spianatoia... facciamo una piccola conca al centro... dove verseremo l&#039;uovo che io precedentemente ho aperto e sbattuto insieme al sale e alla bacca di vaniglia, ai semini della bacca di vaniglia ovviamente. Ora non ci resta che amalgamare il tutto fino a ottenere un composto liscio e omogeneo. All&#039;inizio vi sembrerà impossibile di poter amalgamare una massa di queste proporzioni, specialmente perché vi sembrerà che sarà troppo asciutta, invece vedrete che pian piano con il calore delle mani il burro e solo l&#039;uovo riusciranno a tenere insieme il tutto. L&#039;importante è utilizzare per questa preparazione della farina poco ricca di glutine, quindi 00 per dolci, e poi un altro piccolo consiglio è quello di non buttare il baccello di vaniglia svuotato dai semini ma magari di metterlo all&#039;interno di un contenitore con dello zucchero, così il vostro zucchero profumerà di vaniglia.
Come vedete l&#039;impasto ha raggiunto la consistenza ottimale, se dovesse appiccicarsi un po&#039; alla spianatoia con un tarocco eliminate la pasta attaccata e reimpastate e aiutatevi magari con una piccola spolverizzata di farina. Ora che siamo giunti a questa consistenza, prendiamo l&#039;impasto e lo avvolgiamo nella pellicola, gli diamo una forma di panetto piuttosto schiacciato... così impiegherà meno a raffreddarsi perché adesso dovremo tenerlo almeno per un&#039;ora in frigorifero, un po&#039; perché deve riposare e un po&#039; perché deve diventare più duro altrimenti non riusciremo a lavorarlo. Mi raccomando lavoratelo il meno possibile, giusto per ottenere appunto l&#039;impasto desiderato, perché più lavoriamo l&#039;impasto più si sviluppa il glutine e l&#039;impasto diventa duro e noi non vogliamo questo perché devono essere dei biscotti molto friabili quelli che otterremo... quindi in frigorifero.
Ecco il nostro impasto, come vedete è abbastanza duro; ora spolverizziamo leggermente il piano di lavoro con poca farina giusto per non fare attaccare l&#039;impasto che adesso andremo a tirare in una sfoglia alta almeno 1 cm. Se è ancora un po&#039; troppo duro... fate in questo modo con il mattarello e si ammorbidirà abbastanza velocemente l&#039;impasto. Una volta che avremo ottenuto la sfoglia alta 1 cm, potremo ricavare tante sagome appunto a forma di cerchio del diametro di 6 cm; se non avete un coppa pasta, potete utilizzare una tazza o un bicchiere.
Ora che abbiamo ottenuto i nostri cerchi, è giunto il momento di decorarli, quindi per ottenere il teschio dobbiamo schiacciare più o meno al centro... per fare i denti utilizzeremo dei pinoli, io ne metto 5 per ogni biscotto; poi per quanto riguarda gli occhi utilizzeremo il fondo di un mestolo... pressiamo in questo modo e, per quanto riguarda il naso ci aiuteremo invece con la punta di un coltello... ed ecco il nostro teschio pronto per essere infornato. Procediamo quindi in questo modo con tutti gli altri cerchi di impasto.
Adesso che abbiamo terminato di preparare tutti i nostri teschi, li mettiamo in una teglia foderata con carta forno e li inforniamo in forno preriscaldato a 180° per circa 20-22 minuti. Una volta raffreddati, i nostri mostruosi biscotti teschio sono pronti per essere mangiati, vedrete spariranno in un secondo... buon halloween!</p><p></p>

       <p>Ingredients:
2 large flat mushrooms chopped 
2 yellow peppers, deseeded and chopped
4 small courgettes, chopped
2 tbsp light olive oil
4 large ripe tomatoes, skinned, deseeded and chopped
1 medium white onion, chopped
2 garlic cloves, finely chopped
1 tsp sugar
1 tbsp red wine vinegar
350g jar Seeds of Change Cherry Tomato, Basil ; Parmesan Sauce
1 small bunch basil finely chopped
1 small bunch mint finely chopped
4 red peppers (for stuffing) halved and deseeded
50g Parmesan cheese finely grated/nMethod:
1. Preheat the oven to 180°C/fan oven 160°C/gas 4.
2. Heat 1 tbsp of the oil in a large frying pan. Fry the mushrooms for 3 minutes, then tip them into a large bowl and set aside. Repeat the process with the yellow peppers, courgettes and tomatoes, putting them all in the same bowl as you go,
3. In the same frying pan, add 1 further tbsp of oil and fry the onion for 5 minutes, then add the garlic and sugar. After 5 more minutes add the vinegar and the Seeds of Change Cherry Tomato, Basil ; Parmesan Sauce. When hot, add all the cooked vegetables and season with salt and pepper. Cook for 10 minutes, then add the herbs,
4. Place the red peppers onto a roasting tray, cut side up. Spoon the vegetable mixture into them. Sprinkle with the Parmesan cheese and bake in the oven for 15-20 minutes. Serve with some fresh salad leaves

You can add chickpeas or pinto beans to this vegetarian dish and spice it up with a little Tabasco sauce. /nCredit:
